I'd say Blood On The Tracks, Blonde on Blonde & Highway 61 Revisited are good starting points

I think Freewheelin'; Bringing It All Back Home or Highway 61 or Blonde On Blonde; and Blood On The Tracks. That middle one is all a matter of preference. All are fantastic in their own way.
