I have lots o' Edith Piaf, duh. But if there is a "must have" of hers, please tell me and I will be sure to get it. There is so much of her stuff out there, deservedly, but it gets overwhelming how much stuff you can find by here.

There is a lot to unpack here.
I'd say that if you really like France Gall's Babacar you ought to check her late husband Michel Berger, and maybe particularly his musical Starmania (Celine Dion famously covered Ziggy), but it's full on french 80s pop.
For Brel, my favourite studio record is this one : Jacques Brel - Ne Me Quitte Pas but most of the time his live recording are amazing. He's belgian, but he's also considered one of the greatest writer and singer of the chanson française.
Gainsbourg is also a special case, and a beast with many faces. I highly recommend seeing the movie Gainsbourg (vie héroïque) (see hint #2) because it is a poetic retelling of his life and career and it's great. For records, Melody Nelson is a must have, Jane Birkin/Serge Gainsbourg too for his early career. You're Under Arrest & Love on the beat are also great, but also no longer really "chanson française" per se.
I really like Higelin too, he's a loony, very poetic guy, he started with Brigitte Fontaine, who is the weirdest of the weirdos, but also an amazing writer. I guess the musicality of the lyrics are enticing, but really the play on words and the poetry if it kinda needs to be fluent in french to fully appreciate in my view.
