Not if made traditionally, but you have to make the effort to track down natural cocoa powder (almost all sold today is Dutch/alkalized) to interact with the buttermilk, cider vinegar, and baking soda. It's a very Southern thing but a proper red velvet cake is fantastic.

Yeeep, I think it was @yukbon that told me that his wife also finds red velvet cake extremely bitter and she has a gluten sensitivity just like me. He said that people who find it bitter are usually allergic to red food dye.
