I've got a big ole thing of kimchi in the fridge but i'm not too big on eating it all by itself and i'm never inspired to put it with anything. What's quick, easy, and awesome (that doesn't involve godforsaken spam)?
You can do kimchi fried rice without Spam, although pan-fried Spam is great and authentically Korean.
If you'll trust me on this one:
ingredients:
*steamed jasmine rice
*two scallions, sliced
*two eggs, beaten and seasoned with salt and pepper
*two quarter inch slices of Spam (roughly 1/4 of a tin)
*1 cup of kimchi, roughly chopped
*1 Tbsp unsalted butter
*white sugar
*1/2 chinese sausage, chopped,

in a pan over medium heat, melt butter and cook until brown. add the kimchi, and sprinkle with a pinch of white sugar. saute until the kimchi is browned and caramelized, tasting and adding more sugar if desired to counteract the sourness of the kimchi. remove to a plate and keep warm.
wipe out the pan, then increase heat to medium high. add the Spam slices and fry until crispy and browned on both sides. remove to the same warm plate as the caramelized kimchi.
return heat to medium, then add the chinese sausage, if using, and saute until fat is rendered and sausage is translucent. if not using chinese sausage, add another 1/2 Tbsp butter or neutral oil and heat. add beaten eggs and cook, stirring gently, until scrambled to your liking. fold in scallions, then remove to plate.
serve alongside steamed rice with a cup of hot black coffee.
