This is without a doubt my favorite chicken thigh pressure cooker recipe. Made easier if you have a stick blender.I used our Instant Pot for the first time ever today. I did chicken thighs and I have to say; they came out better than any time I've grilled them. I did a simple dry rub this time, but I'll definitely be trying different concoctions over the winter.
