I was reading up on this and saw something interesting (don’t know how accurate it is but it would make sense) I read that more Canadians shoot left (regardless of hand dominance) while most Americans shoot right. They speculate that for Americans, the first thing most learn to swing is a baseball bat so when they start playing hockey many keep a similar swing. Whereas in Canada most people learn to swing a hockey stick first where swinging left or right is less consequential and they will learn to shoot lefty and since the NHL is dominated by Canadians you end up with a lot of more lefty shooters in the NHL.Same with my father. For hockey unlike baseball, you sometimes/often only have one hand on your stick; generally you want it to be your dominant one. (Shooting left means your right hand is at the top of the stick.)
